It has a dry, elegant flavour.<\/p>\n<p class=\"p6\"><strong>Winemaking<\/strong><\/p>\n<p class=\"p1\">By gently pressing the grapes, we immediately separate the skins from the must. After the first alcoholic fermentation, the base wines are aged until the end of the following spring in temperature-controlled steel tanks. They are then skilfully blended to create the cuv\u00e9e.
