A delicate aroma with a fine, persistent effervescence. It has a dry, elegant flavour.
Winemaking
By gently pressing the grapes, we immediately separate the skins from the must. After the first alcoholic fermentation, the base wines are aged until the end of the following spring in temperature-controlled steel tanks. They are then skilfully blended to create the cuvée. This particular technique gives the Spumante the characteristic flavour typical of the fine wines of our region.

The grapes are delicately destemmed, then the alcoholic and malolactic fermentation takes place at a controlled temperature in thermo-conditioned steel containers . This is followed by 6 months of aging in steel and then maturation for at least another 6 months in the bottle.Food pairings

Nell’ambito della rassegna culturale Garda Events, venerdì 31 luglio 2026 alle ore 21:00, presso l’azienda vinicola Vini Colombo – Cà Sabbionare (VR), avrà luogo un concerto dedicato a uno dei capolavori più celebri della musica barocca: Le quattro stagioni di Antonio Vivaldi.
Il Collegium Musicum LusItalia, sotto la guida del violinista e concertatore Riccardo Manuel Vartolo, interpreterà i quattro concerti per violino tratti dalla raccolta Il cimento dell’armonia e dell’inventione: Primavera, Estate, Autunno e Inverno.

A rosé wine infused with 24 medicinal herbs.Main medicinal botanicals

The selected herbs are harvested fresh at the height of their flowering, washed with spring water and added to the rosé wine; this is followed by a slow and prolonged infusion in the wine until the desired medicinal intensity and persistence are achieved. The wine is then racked off the spent herbs, which are in turn pressed to recover the wine residue absorbed by the plant material. Careful checks allow us to determine the exact amount of sugar required to soften the bitterness; at this point, Colombo Rosé Vermouth is ready to seduce connoisseurs with refined palates.Pairings

The selected grapes are harvested, strictly by hand, in the first ten days of September.
Winemaking
The grapes are gently crushed and pressed, and the clean free-run must is sent to fermentation in stainless steel tanks. In the spring, after racking, the wine is made sparkling by adding sugar and yeast, and then bottled. A second fermentation in the bottle then begins, followed by 24 months of maturation on the lees.
Sensory profile
Straw yellow color, a very white foam, and a very fine perlage are the fruit of the great Trentino sparkling wine tradition. The nose is fragrant and fruity with light hints of yeast. On the palate, it is dry, fresh, and harmonious.

Olfactory it is endowed with a great complexity that crosses a range of perceptions, from the fruity ones, where the small berries and the cherries in alcohol stand out, to vanilla notes that recall the custard. After a short drying of the grapes for 30 days, the wine undergoes alcoholic and malolactic fermentation in steel. It is then left to refine for 15 months in French oak barrels and terracotta amphorae. Maturation in the bottle for at least 5 months.

This fascinating wine is obtained from Pinot Grigio grapes grown on the hills overlooking Lake Garda, on the Veronese shore. The soft vinification and partial maceration give it its particular copper color. The low-temperature fermentation brings delicate fruity notes to the bouquet, whose aroma enhances the taste.
